Chill out! Your wine, that is.

Stop it now! You don’t need to serve your reds at room temperature! Some, if not ALL red wines benefit from a touch of a chill, so pop your bottle in the fridge for 10-15 minutes to restore the order and balance. Thin skinned varieties with modest to moderate tannins and vibrant fruit expression, such as Pinot Noir, Grenache, Mencia, Cab FranceNerello Mascalese and similar styles will benefit from chilling to around 55F. Bolder, richer varieties, like Syrah or Cabernet Sauvignon - chill down to around 65F. Trust me. And if you don’t like it, just let it warm back up!
